Bone in Beef
We aim to deliver bone in beef within five days of slaughter to our customers’ exacting
specifications. This ensures that our customers control their own maturation
process and each “bone in cut” contains confirmation of the customer’s
unique specification for weight, fat class, confirmation grade, sex and traceability.
Boneless Beef
Boneless cuts are prepared to a set specification. We select
only steer and heifer beef, which is matured for a minimum
of 10 to 14 days prior to de-boning. We select only U and R
grades for confirmation and 4L and 4H for fat coverage. Only
sides of beef that weigh between 165-185 kg. are chosen,
which ensures consistency of size of the boneless cuts.

a way, so as to maximise your margin.The culmination of these
